About the Recipe

Easy apricot bliss balls made with SunnyB sunflower seed butter. A nut-free, no-bake snack perfect for school lunchboxes and healthy snacking.

Ingredients

  • 150g (just under 1 cup) dried apricots

  • 50g (½ cup) rolled oats, lightly toasted

  • 40g (½ cup) desiccated coconut, lightly toasted + extra for rolling

  • 60g (½ cup) SunnyB natural sunflower seed butter

  • 2 tbsp orange juice

  • 1 tsp orange zest

  • 2 tsp honey

  • 1 tsp vanilla extract

  • 1 tsp ground flaxseed

  • ½ tsp cinnamon

  • ⅛ tsp salt

Preparation

  1. Add all ingredients to a blender or food processor.

  2. Blend for approximately 2 minutes, or until the mixture is well combined and sticks together when pressed.

  3. Scoop tablespoon-sized portions of the mixture and roll between your hands into balls (approx. 12g each).

  4. Roll each ball in extra desiccated coconut to coat.



Store in an airtight container in the fridge for up to 1 week.
Freeze for up to 3 months.
