About the Recipe
Perfect snack for the kids' lunch boxes or afternoon tea, these Coconut SunnyB squares are quick and easy to make.
Ingredients
90g butter, softened
1 cup Sugar or (½ cup white and ½ cup coconut sugar)
1/2 cup SunnyB
2 large eggs or 3 small eggs
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking powder
1/4 teaspoon Salt
1 cup desiccated coconut
FROSTING
150g White Chocolate
1 Tablespoon Coconut Oil
Preparation
Heat oven to 180º. Use a baking sheet pan, and cover with baking paper.
Beat butter, sugar, and SunnyB in a bowl with an electric mixer until fluffy. Add in eggs and vanilla one at a time until incorporated. In a separate bowl stir together flour, baking powder, salt, and coconut Add to creamed mixture. Beat just until mixed. Spread into prepared pan.
BAKE 25 to 30 minutes until cooked through and light brown on top.
Place chocolate into a bowl with oil. Melt in the microwave or on the stove. Drizzle over cooled bars. Cut into squares.
