Health Low GI SunnyB loaf

About the Recipe

A wholesome and healthy bread filled with SunnyB goodness

Ingredients

1 ½ cup self-raising flour

2.5 ml salt

10 ml baking powder

250 ml oat bran

1 medium apple, peeled and grated

30 ml maple syrup

125 ml brown sugar

30 ml oil

1/3 cup SunnyB

3 eggs

60 ml milk

15 ml sunflower seeds

Preparation

Preheat the oven to 160 degrees C, Grease a loaf pan or put some baking paper in.

Mix self-raising flour, salt, baking powder, and oat bran in a big bowl.

Mix in grated apple.

Place maple syrup, brown sugar, and oil in a small pot.  Heat up on low to medium heat and stir until sugar is dissolved. Mix in the SunnyB.

Beat eggs and milk together in a separate bowl, and add milk mixture and SunnyB mixture to dry ingredients.  Mix well and spoon the mixture into the prepared pan.

Sprinkle sunflower seeds on top and bake for 45 min to 1 hour until brown on top and cooked through.

Let it cool in the pan for 10 min.
