Easy No-Bake Sunflower Seed Butter & Oat Bliss Balls

About the Recipe

These easy, no-bake bliss balls are made with SunnyB’s 100% nut-free sunflower seed butter, perfect for school lunchboxes and busy afternoons.

Ingredients

1 cup old-fashioned oats 

1 cup natural SunnyB Sunflower Seed Butter

1/4 cup chopped pitted dates 

2 tbsp honey

2 tbsp chia seeds

pinch of salt

1/2 tsp vanilla paste

Desiccated Coconut (for dusting)


Preparation

  • Mix the chopped dates and chia seeds, sprinkle 1 - 2 teaspoons of water and set aside for 5 - 10 minutes to soften the dates and activate the chia seeds. 

  • For a finer texture, pulse the oats in a food processor before adding other ingredients. For a chunkier texture, leave them whole.

  • Add the softened date mixture, sunflower seed butter, honey, vanilla, salt and oats to a food processor. 

  • Process until the mixture forms a thick dough that holds together when pressed between your fingers.

  • Taste and adjust the sweetness and salt.

  • Chill for about 15 minutes to make the mixture easier to roll into balls.

  • Scoop the mixture into tablespoonfuls and roll into balls. 

  • Coat with desiccated coconut if desired.

  • Makes 26 - 28 bliss balls


NOTES:

  1. Store in an airtight container in the fridge for up to 7 days. Freeze for up to 3 months.

  2. The recipe uses SunnyB Natural Sunflower seed butter, but this can be replaced with SunnyB Smooth Sunflower seed butter if you only have that on hand. If you do, reduce or omit the added salt.

  3. Mini chocolate chips, or other dried fruit, can be easily substituted 1:1 with the dates. Dried fruit alternatives include apricots, cranberries, mango, cherries, etc.
