About the Recipe

These Chocolate SunnyB Brownie Bliss Bites are chewy, chocolatey, and seriously snackable. Made with Chocolate SunnyB, toasted oats, dates, and Weet-Bix, they’re an easy no-bake snack perfect for lunchboxes and afternoon treats.

Nut-free, school-safe, and dangerously snackable.

Ingredients

  • 80 g Weet-Bix, crushed (about 5 biscuits)

  • ¾ cup Chocolate SunnyB

  • ⅓ cup rolled oats

  • 80 g pitted dates or date paste

  • 1 tbsp honey or maple syrup (optional)

  • 15 g milk powder

  • 1 heaped tsp cocoa powder

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 25 – 40 g dark chocolate or choc chips

  • Desiccated coconut, for rolling

Preparation

  1. Lightly toast the rolled oats in a dry pan until fragrant and lightly golden. Allow to cool.

  2. If using pitted dates, cover and soak them in a bit of boiling water for 5 minutes.

  3. Blend the dates, Chocolate SunnyB, and vanilla essence together until thick and smooth.

  4. In a large bowl, combine the crushed Weet-Bix, toasted oats, milk powder, cocoa powder, salt and chocolate pieces. 

  5. Add the blended Chocolate SunnyB mixture to the dry ingredients and mix until fully combined.

  6. Roll into bite-sized balls.

  7. Lightly coat in desiccated coconut.

  8. Refrigerate until firm.

Store in an airtight container in the fridge.

Makes approximately 18–22 bites.
