About the Recipe
This roasted kumara salad with feta, greens and SunnyB sunflower butter dressing is a healthy, nut-free meal packed with flavour and plant-powered nutrition.

Ingredients
Salad
2 cups kumara, cubed
2 tbsp olive oil
100 g rocket
½ block feta cheese, cubed
1 Beurre Bosc pear, sliced
roasted sunflower seeds
SunnyB Dressing
1 tbsp SunnyB Natural Sunflower Seed Butter
2 tsp pomegranate molasses
2 tbsp water
1 tsp lemon juice
1 clove garlic, crushed
salt and black pepper to taste
Preparation
Roast the kumara
Toss cubed kumara with a little olive oil, salt and pepper. Roast at 200°C for about 20–25 minutes until golden and tender.Prepare the dressing
In a small bowl, whisk together all the salad dressing ingredients and set aside.Assemble the salad
In a large bowl, combine the roasted kumara, rocket, sliced pear and feta cubesFinish the dish
Drizzle with SunnyB dressing and sprinkle with roasted sunflower seeds.
Serve warm or at room temperature.
